The humble blender has regained its position as a kitchen essential thanks to the world of wellness equipping us with uber-nutritious and oh-so-good recipes. Tess Masters, aka the Blender Girl, shares with us her energy supercharging Magic Mojo recipe from her new book The Perfect Blend. Energising has never tasted so good!
2 cups (480ml) unsweetened almond milk or hemp milk (strained if homemade)
¼ cup (60ml) espresso (2 shots), plus more to taste
¼ cup (18g) cacao powder or unsweetened cocoa powder
½ teaspoon probiotic powder (optional)
1 cup (30g) loosely packed chopped collard greens (stalks removed)
½ cup (60g) frozen raw cauliflower florets
¼ cup (65g) roasted almond butter
¼ cup (43g) firmly packed pitted dates, soaked in purified water and drained
1 teaspoon natural vanilla extract
1 ½ frozen bananas, plus more to taste
1 tablespoon maca powder
1 tablespoon chia seeds (black or white)
Pinch of cayenne pepper
Throw all of the ingredients except the bananas and boosters into your blender, and blast on high for 30 seconds, until well combined. Add the boosters and the frozen bananas and blast again on high for another 30 seconds, until smooth and creamy. Drink immediately before the collard greens get assertive and the chia seeds (if using) thicken the drink.
